Step 1
Heat the olive oil in a large pan over medium heat.

Add the chopped onion, carrot, celery (if using), and garlic. Sauté until softened, about 5 minutes.

Add the ground beef and cook until browned, breaking it up with a spoon as it cooks.

Stir in the tomato paste and cook for 1-2 minutes to deepen the flavor.

Add the canned tomatoes, red wine (if using), and oregano. Season with salt and pepper.

Simmer on low heat for at least 20-30 minutes, stirring occasionally. The longer you cook, the better the flavors develop.
