Salmon
Fresh salmon fillets that are nice and pink and moist. Alternatively, get frozen fillets that are vacuum sealed with no freezer burn.

1 large onion, chopped.

Lemon juice
Juice of 2 lemons. Optional: extra 1 lemon sliced for decoration and taste.

Olive oil
2 tbsp of olive oil.

Salt
1 good pinch of salt.

Vinegar
2 tbsp of apple vinegar.

Tahini (sesame based)
2 cups (280g) of Tahini paste to make the Tarator sauce.

Garlic
4 glove of garlic, minced and pressed.

1/4, 1/2, or 1 cup depending on how fluid the mixed is desired to be.

1/2 cup of melted butter (optional).

Coriander
A handful of coriander, sliced and minced. (Optional).

Only a few is needed to spread on the salmon fillets for decoration, and a few to add to the Tarator sauce.

Step 1
Preheat the oven to 180 degrees.
Step 2
Place the salmon fillet(s) in a tray.

Press the 2 lemons and pour half the juice (1 lemon) on the salmon fillets (keep the other half (1 lemon) for the Tarator sauce.)

Repeat the process by removing and pouring the lemon juice until the salmon absorbs it well.
Step 3
Cut the onions into small slices and place them on the salmon fillets.
Step 4
Pour the olive oil, optionally pour the melted butter on the salmon fillet, add a pinch of salt and a pinch of pepper, and spread a little of coriander if desired.
Step 5
Prepare the Tarator sauce by mixing the Tahini, the remaining lemon juice, the garlic, and the vinegar in a bowl.

Add as much water as needed (1/2 cup) to the Tarator mix in order to make it creamy. Then place it in the fridge until the salmon fillets is cooked.

Place the salmon fillets tray in the oven and cook it for 35 - 45 minutes at 180 degrees.
